
Milagu Rasam Pepper Soup
Pepper-hot rasam thin as tea, the Tamil remedy for every monsoon cold. The Indian answer to soup night: shorba logic, butter texture. Ladle into warm bowls with a crack of pepper.
Ingredients
- Butter2 tbsp
- Saltto taste
- Onion1, chopped
- Tomato3, chopped
- Garlic3 cloves
- Turmeric Powder1/4 tsp
- Curry Leaves2 sprigs
- Vegetable Stock4 cups
- Tamarind Paste2 tbsp
- Black Pepper1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Get the tomato and vegetables ready; soups are prep-heavy, cook-light.

Sweat the aromatics in butter till translucent and sweet — low heat, patience.

Add the tomato and black pepper with the spices; stir two minutes to coat in the fat.

Pour in the stock, bring to a boil, then simmer covered 20 minutes till everything is spoon-tender.

Blend smooth (or leave rustic), adjust the seasoning, and serve hot with a swirl of cream and pepper on top.
Chef's tip
Season at the end; stock varies wildly in salt.
