Sweet Corn Chicken Soup Indo
Indo-Chinese sweet-corn chicken soup, the restaurant starter everyone skips past and then orders. The Indian answer to soup night: shorba logic, butter texture. Serve hot with crusty bread or garlic naan.
Ingredients
- Chicken500 g, bone-in pieces
- Butter2 tbsp
- Saltto taste
- Onion1, chopped
- Garlic3 cloves
- Turmeric Powder1/4 tsp
- Eggs4
- Vegetable Stock4 cups
- Soy Sauce1 cup, chopped
- Corn2 cups
- Black Pepper1/2 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Prep the vegetables and the chicken: washed, peeled and cut to even sizes.

Sweat the aromatics in butter till translucent and sweet — low heat, patience.

Tumble in the chicken with the corn and spices; toast briefly in the butter.

Pour in the stock, bring to a boil, then simmer covered 20 minutes till everything is spoon-tender.

Blend smooth (or leave rustic), adjust the seasoning, and serve hot with a swirl of cream and pepper on top.
