
Tomato Saar Aur Kokum
Maharashtrian tomato saar with kokum sourness, the light summer soup of Marathi thalis. Velvet in a bowl — warm, gentle and quietly spiced. Best with a drizzle of cream and warm bread.
Ingredients
- Butter2 tbsp
- Saltto taste
- Onion1, chopped
- Tomato3, chopped
- Garlic3 cloves
- Ghee3 tbsp
- Turmeric Powder1/4 tsp
- Curry Leaves2 sprigs
- Vegetable Stock4 cups
- Black Pepper1/2 tsp
- Kokum6-8 pieces

- Fresh Cilantro2 tbsp, chopped
Instructions

Get the tomato and vegetables ready; soups are prep-heavy, cook-light.

Sweat the aromatics in butter till translucent and sweet — low heat, patience.

Add the tomato and kokum with the spices; stir two minutes to coat in the fat.

Pour in the stock, bring to a boil, then simmer covered 20 minutes till everything is spoon-tender.

Blend smooth (or leave rustic), adjust the seasoning, and serve hot with a swirl of cream and pepper on top.
Chef's tip
Resting the finished dish for five minutes off the heat lets the spices settle and deepen.
