Karnataka-style tomato baath — fluffy rice tossed with tangy tomato masala, mustard tempering and curry leaves. Everyday lunch-box gold.

Ingredients
- Saltto taste
- Onion1, sliced
- Tomato3 large, chopped
- Ginger1 tsp minced
- Green Chili2, slit
- Ghee2 tbsp
- Turmeric Powder1/2 tsp
- Rice3 cups cooked, cooled
- Urad Dal1 tsp
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Red Chili Powder1 tsp
Optional extras
- Fresh Cilantro2 tbsp chopped
- Dried Red Chilies2
- Lemonoptional squeeze
Instructions

Cook rice and cool until grains separate.

Temper mustard seeds, chana-style dal vibes (urad), dried red chili and curry leaves in ghee or oil.

Sauté onion, green chili and ginger; add chopped tomatoes, turmeric and chili powder; cook to a thick masala.

Fold in rice with salt until every grain is coated red-orange.

Finish with fresh cilantro and a squeeze of lemon if you like.
Chef's tip
Slightly undercook the rice so it stays separate when mixed with the jammy tomato masala.
