Brinjal (eggplant) rice from Karnataka — smoky soft vangi simmered in a fragrant spice powder and folded through steamy rice.

Ingredients

  • Saltto taste
  • Onion1, sliced
  • Cumin Seeds1/2 tsp
  • Ghee2 tbsp
  • Coriander Powder1 tbsp
  • Turmeric Powder1/2 tsp
  • Rice3 cups cooked
  • Urad Dal1 tsp
  • Mustard Seeds1 tsp
  • Curry Leaves1 sprig
  • Peanuts2 tbsp roasted
  • Eggplant300 g, cubed
  • Red Chili Powder1 tsp

Optional extras

  • Fresh Cilantro2 tbsp
  • Asafoetidapinch

Instructions

    Cook rice; cool. Cubed eggplant tossed with turmeric and salt.

    Dry-roast spices lightly (or use vangi-bath style chili-coriander-cumin mix); grind coarse.

    Temper mustard, urad dal and curry leaves; sauté onion and eggplant until soft and browned.

  4. 4

    Add spice powder and a splash of water; cook until eggplant collapses into the masala.

    Fold through rice; finish with peanuts and cilantro.

Chef's tip

Small purple brinjals cook faster and stay creamier than large globe eggplant.
