Temple-style tamarind rice — tangy puliogare gojju coating every grain with sesame, peanuts and jaggery balance.

Ingredients
- Saltto taste
- Turmeric Powder1/2 tsp
- Vegetable Oil3 tbsp
- Rice3 cups cooked, cooled
- Urad Dal1 tsp
- Mustard Seeds1 tsp
- Curry Leaves1 sprig
- Dried Red Chilies3
- Asafoetidapinch
- Peanuts3 tbsp
- Tamarind Paste3 tbsp
- Red Chili Powder1 tsp
- Sesame Seeds2 tbsp, roasted and powdered
- Jaggery1 tsp
Instructions

Cook rice and cool completely.

Soak tamarind; extract thick pulp.

Temper mustard, urad, peanuts, curry leaves and dried chili; add tamarind pulp, turmeric, chili powder and a pinch of jaggery; reduce to a glossy gojju.

Stir in sesame powder if using; fold gojju through rice.

Rest 10 minutes so flavors settle.
Chef's tip
The gojju should be thick enough to coat, not soup the rice — reduce patiently.
