Marble Cake
Vanilla and cocoa batters swirled so every slice gets its own pattern. The kind of simple, generous cake that disappears before it cools. Great as-is, or warmed for twenty seconds with a scoop of ice cream.
Ingredients
- Butter3 tbsp
- Salta pinch
- Eggs4
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 cup, chopped
- Cocoa Powder1/2 cup
Instructions
- 1
Heat the oven to 180 C / 350 F and line the tin; a properly prepared pan is half the battle.
- 2
Cream the butter, sugar and butter together until the mixture turns several shades lighter.
- 3
Alternate the dry ingredients with the milk, folding with a spatula so the batter stays airy.
- 4
Pour into the tin and bake 30-40 minutes, until a skewer in the centre comes out clean.
- 5
Level the top, pile on the frosting, and let it rest ten minutes before slicing.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
