
Chai Spice Cake
Cardamom-cinnamon-ginger sponge, the masala-chai flavours baked into teatime. Deeply flavourful with a soft, even crumb and golden edges. Serve thick slices with tea or a spoonful of whipped cream.
Ingredients
- Butter3 tbsp
- Salta pinch
- Ginger2-inch piece
- Eggs3
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Ground Cinnamon1 tsp
- Green Cardamom2 cups, chopped

Set the oven to 180 C / 350 F and line the base of your tin with parchment.

Whisk the ginger, eggs and sugar until pale, thick and doubled — this takes three or four good minutes.

Fold the flour and ground cinnamon through in two additions; overmixing makes a dense crumb.

Bake in the middle of the oven for 30-35 minutes; cool in the tin for ten before turning out.

Level the top, pile on the frosting, and let it rest ten minutes before slicing.
Chef's tip
With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
