Date Walnut Cake
Chopped dates dissolved into caramel-sweet batter, the teatime loaf of grandmothers everywhere. A tender, bakery-style crumb that stays moist for days. Great as-is, or warmed for twenty seconds with a scoop of ice cream.
Ingredients
- Butter3 tbsp
- Salta pinch
- Eggs3
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Walnuts1 cup, chopped
- Brown Sugar1/2 cup
- Dates1 cup, pitted and chopped

Set the oven to 180 C / 350 F and line the base of your tin with parchment.

Beat the butter with the sugar until light and fluffy, then add the eggs one at a time.

Sift in the flour, walnuts and leaveners and fold gently — stop the moment the batter comes together.

Pour into the tin and bake 30-40 minutes, until a skewer in the centre comes out clean.

Cool completely, then frost or dust — a warm cake melts frosting into a puddle.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
