
Strawberry Shortcake
Tender shortcake split over macerated strawberries and clouds of cream. Deeply flavourful with a soft, even crumb and golden edges. Serve thick slices with tea or a spoonful of whipped cream.
Ingredients
- Butter3 tbsp
- Heavy Cream1/4 cup
- Salta pinch
- Eggs3
- Sugar1 tsp
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Strawberries2 cups, hulled and sliced
Instructions

Heat the oven to 180 C / 350 F and line the tin; a properly prepared pan is half the battle.

Whisk the butter, eggs and sugar until pale, thick and doubled — this takes three or four good minutes.

Sift in the flour, heavy cream and leaveners and fold gently — stop the moment the batter comes together.

Pour into the tin and bake 30-40 minutes, until a skewer in the centre comes out clean.

Cool completely, then frost or dust — a warm cake melts frosting into a puddle.
Chef's tip
With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
