Hummingbird Cake
Banana-pineapple spice cake under cream-cheese frosting, the Southern favourite. The kind of simple, generous cake that disappears before it cools. Serve thick slices with tea or a spoonful of whipped cream.
Ingredients
- Butter1/2 cup, softened
- Salta pinch
- Eggs3
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Pineapple1 cup, chopped
- Ground Cinnamon1 tsp
- Walnuts1 cup, chopped
- Banana3, ripe and mashed

Set the oven to 180 C / 350 F and line the base of your tin with parchment.

Cream the butter, sugar and walnuts together until the mixture turns several shades lighter.

Sift in the flour, pineapple and leaveners and fold gently — stop the moment the batter comes together.

Bake in the middle of the oven for 30-35 minutes; cool in the tin for ten before turning out.

Once cool, slice and serve, or ice it generously and let the frosting set.
Chef's tip
Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
