
Coconut Cream Cake
Coconut-studded layers under cream frosting and a snowfall of flaked coconut. Deeply flavourful with a soft, even crumb and golden edges. Keeps well covered for three days — if it lasts that long.
Ingredients
- Butter3 tbsp
- Heavy Cream1/4 cup
- Salta pinch
- Eggs3
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 cup, chopped
- Grated Coconut1 cup
Instructions

Preheat the oven to 175 C / 350 F, grease the tin and dust it so nothing sticks later.

Cream the butter, sugar and butter together until the mixture turns several shades lighter.

Fold the flour and heavy cream through in two additions; overmixing makes a dense crumb.

Bake in the middle of the oven for 30-35 minutes; cool in the tin for ten before turning out.

Level the top, pile on the frosting, and let it rest ten minutes before slicing.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
