
Vanilla Bean Sponge Cake
The plain vanilla sponge done perfectly — the base every baker should own. A tender, bakery-style crumb that stays moist for days. Keeps well covered for three days — if it lasts that long.
Ingredients
- Butter3 tbsp
- Heavy Cream1/4 cup
- Salta pinch
- Eggs4
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract2 cups, chopped
Instructions

Set the oven to 180 C / 350 F and line the base of your tin with parchment.

Whisk the butter, eggs and sugar until pale, thick and doubled — this takes three or four good minutes.

Alternate the dry ingredients with the milk, folding with a spatula so the batter stays airy.

Bake in the middle of the oven for 30-35 minutes; cool in the tin for ten before turning out.

Once cool, slice and serve, or ice it generously and let the frosting set.

Room-temperature ingredients blend smoother — pull the dairy and eggs out of the fridge an hour ahead.
