
Tres Leches Milk Cake
Sponge soaked in three milks until pudding-soft, the Latin classic that redefines moist. A tender, bakery-style crumb that stays moist for days. Serve thick slices with tea or a spoonful of whipped cream.
Ingredients
- Butter1/2 cup, softened
- Heavy Cream1/4 cup
- Salta pinch
- Eggs4
- Milk1 litre
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Condensed Milk1/2 cup

Set the oven to 180 C / 350 F and line the base of your tin with parchment.

Whisk the milk, eggs and sugar until pale, thick and doubled — this takes three or four good minutes.

Alternate the dry ingredients with the milk, folding with a spatula so the batter stays airy.

Bake in the middle of the oven for 30-35 minutes; cool in the tin for ten before turning out.

Once cool, slice and serve, or ice it generously and let the frosting set.
Chef's tip
Weigh your flour if you can; cup measures can be off by twenty percent either way.
