Semolina Lemon Cake
Rustic semolina cake soaked in lemon syrup, the Mediterranean teatime regular. Deeply flavourful with a soft, even crumb and golden edges. Serve thick slices with tea or a spoonful of whipped cream.
Ingredients
- Yogurt2 cups, whisked
- Butter1/2 cup, softened
- Salta pinch
- Eggs3
- Sugar1 tsp
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Semolina (Rava)1 cup
- Lemon Zest1 tbsp

Heat the oven to 180 C / 350 F and line the tin; a properly prepared pan is half the battle.

Beat the butter with the sugar until light and fluffy, then add the eggs one at a time.

Fold the flour and lemon zest through in two additions; overmixing makes a dense crumb.

Bake in the middle of the oven for 30-35 minutes; cool in the tin for ten before turning out.

Level the top, pile on the frosting, and let it rest ten minutes before slicing.
Chef's tip
Weigh your flour if you can; cup measures can be off by twenty percent either way.
