
Chocolate Avocado Cake
Avocado replaces butter in this fudgy vegan-friendly chocolate cake. Deeply flavourful with a soft, even crumb and golden edges. Serve thick slices with tea or a spoonful of whipped cream.
Ingredients
- Butter1/2 cup, softened
- Salta pinch
- Eggs3
- Sugar1 cup
- Avocado2 cups, chopped
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Dark Chocolate1 cup, chopped
- Brown Sugar1/2 cup
- Cocoa Powder1/2 cup
Instructions

Heat the oven to 180 C / 350 F and line the tin; a properly prepared pan is half the battle.

Beat the butter with the sugar until light and fluffy, then add the eggs one at a time.

Alternate the dry ingredients with the milk, folding with a spatula so the batter stays airy.

Pour into the tin and bake 30-40 minutes, until a skewer in the centre comes out clean.

Cool completely, then frost or dust — a warm cake melts frosting into a puddle.
