
Saffron Milk Cake
Saffron-soaked milk cake layers, the Indian-bakery sensation that melts on contact. Deeply flavourful with a soft, even crumb and golden edges. Serve thick slices with tea or a spoonful of whipped cream.
Ingredients
- Butter1/2 cup, softened
- Heavy Cream1/4 cup
- Salta pinch
- Saffrona pinch, soaked in warm milk
- Eggs3
- Milk1 litre
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Condensed Milk1/2 cup
Instructions

Heat the oven to 180 C / 350 F and line the tin; a properly prepared pan is half the battle.

Beat the butter with the sugar until light and fluffy, then add the eggs one at a time.

Sift in the flour, saffron and leaveners and fold gently — stop the moment the batter comes together.

Bake in the middle of the oven for 30-35 minutes; cool in the tin for ten before turning out.

Once cool, slice and serve, or ice it generously and let the frosting set.
