
Chocolate Chip Cookies
The tollhouse standard — crisp edge, molten centre, chocolate in every bite. Buttery and fragrant, with a bakery-quality crackle on top. Best the day they are baked, but they keep three days in a tin.
Ingredients

- Salta pinch
- Eggs4
- Sugar3/4 cup
- Baking Powder1/2 tsp
- Vanilla Extract1 tsp
- Brown Sugar1/2 cup
- Chocolate Chips1 cup
Instructions

Heat the oven to 175 C / 350 F and line two trays with parchment.

Sift the dry ingredients — flour, brown sugar, leavener — into a bowl and whisk briefly.

Cream butter with both sugars until fluffy, beat in the egg, then fold in the flour mixture.

Stir the chocolate chips through the dough until evenly studded.

Chill the dough twenty minutes, scoop, and bake until the edges are golden and centres soft.

With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
