
Vanilla Rice Kheer Pudding
Cardamom rice pudding with nuts, the kheer that crossed borders and stayed. Silky and spoonable, with a clean, comforting sweetness. Serve chilled, straight from the fridge, in small glasses or ramekins.
Ingredients

- Rice3/4 cup
- Milk1 litre
- Sugar1 tsp
- Vanilla Extract1 tsp
- Green Cardamom1 tsp
Instructions

Set out all ingredients and the serving dishes first; the cooking itself moves quickly.

Combine the milk, milk and sugar, stirring until dissolved, then take it off the heat.

Whisk the rice with the sugar, then temper with a ladle of the hot milk, whisking hard.

Cook over low heat, stirring constantly, until the mixture coats the back of a spoon.

Pour into dishes, chill at least four hours, and serve cold with sugar on top.
Chef's tip
Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
