
Cherry Vanilla Ice Cream
Roasted-cherry ice cream with vanilla custard, the ice-cream-parlour revival. Intensely flavoured and smooth, better than the tubs at the store. Perfect over a warm brownie or alongside a slice of pie.
Ingredients
- Heavy Cream1/4 cup
- Salta pinch
- Milk1 cup
- Sugar1/2 cup
- Vanilla Extract1 cup, chopped
- Egg Yolk1 cup, chopped
- Cherries1 cup, pitted
Instructions

Get everything cold: the base, the churn bowl, even the container you will freeze it in.

Dissolve the sugar into the base — warm gently for custard styles, just stir for fruit bases.

Stir or blend the cherries through the chilled base until smooth and evenly flavoured.

Churn until it holds a soft peak and mounds slowly off the paddle.

Transfer to a container, press a sheet of parchment on the surface, and freeze four hours until scoopable.
Chef's tip
Salt is the missing ingredient in most home desserts — a small pinch makes chocolate and caramel taste more like themselves.
