
Mango Malai Kulfi
Alphonso mango folded into reduced milk, the summer kulfi of Indian streets. Cold, creamy and scoopable — no ice crystals, no apologies. Serve in chilled bowls or cones straight from the freezer.
Ingredients
- Salta pinch
- Milk1 litre
- Sugar1 tsp
- Vanilla Extract1 tsp
- Mango2, pureed
- Green Cardamom1 tsp

If using an ice cream maker, freeze the bowl a full day ahead and chill the custard base overnight.

Dissolve the sugar into the base — warm gently for custard styles, just stir for fruit bases.

Blend in the mango — taste again; the frozen version will be less sweet and less intense than this.

Freeze in a shallow tray, scraping and stirring vigorously every 30 minutes, three or four rounds, if churning by hand.

Freeze solid for at least four hours, then let it sit five minutes at room temperature before scooping.

Salt is the missing ingredient in most home desserts — a small pinch makes chocolate and caramel taste more like themselves.
