
Kulfi Pistachio Style
Slow-reduced kulfi on a stick, the denser, chewier Indian answer to ice cream. Intensely flavoured and smooth, better than the tubs at the store. Perfect over a warm brownie or alongside a slice of pie.
Ingredients
- Salta pinch
- Milk1 litre
- Sugar1 tsp
- Vanilla Extract1 tsp
- Green Cardamom1 tsp
- Pistachios1/2 cup, chopped
Instructions

Chill the mixture base thoroughly before churning — cold bases freeze with finer, creamier texture.

Combine the sugar with the sugar, stirring until no grains remain, then chill the base.

Blend in the milk — taste again; the frozen version will be less sweet and less intense than this.

Churn until it holds a soft peak and mounds slowly off the paddle.

Ripen in the freezer overnight for the cleanest scoops.
