
Apple Rose Puff Pastry
Apple roses baked in puff pastry — the dessert that looks twice as hard as it is. Golden-crusted and generous, with clean slices and no sogginess. A slice of sharp cheese alongside is old-school and excellent.
Ingredients
- Butter3 tbsp
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Brown Sugar1/2 cup
- Puff Pastry1 cup, chopped
- Apple2 cups, chopped
Instructions

Work quickly with chilled butter so it stays in visible flakes through the dough.

Cut the cold butter through the flour, drizzle in ice water, and gather the dough without kneading.

Rest the dough, wrapped, in the fridge for at least thirty minutes — relaxed dough will not shrink.

Fold the apple and puff pastry through the dough until evenly distributed.

Bake at 190 C / 375 F for 35-45 minutes until deeply golden and bubbling; cool before slicing so the filling sets.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
