Pistachio Baklava Rolls
Finger-shaped baklava rolls, the same luxury in snackable form. Golden-crusted and generous, with clean slices and no sogginess. Good warm or at room temperature the same day.
Ingredients
- Butter3 tbsp
- Honey2 tbsp
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 tbsp
- Phyllo Dough1 cup, chopped
- Pistachios1/2 cup, chopped
Instructions
- 1
Keep everything cold — the butter, the water, even the bowl — that is the whole secret of pastry.
- 2
Toss the butter through the flour, add just enough cold water to hold, and press into a disc.
- 3
Chill the wrapped dough thirty minutes to an hour while you prepare the pistachios.
- 4
Fold the pistachios and phyllo dough through the dough until evenly distributed.
- 5
Bake hot until the pastry is bronzed and crisp; a cooling spell keeps the filling from running.
Chef's tip
Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
