Palmier Elephant Ears
Two-ingredient puff-palmiers caramelised into shatter-crisp ears. Rustic, crisp-edged and comforting — the dessert that empties the table quietly. Good warm or at room temperature the same day.
Ingredients
- Butter3 tbsp
- Salt1/2 tsp
- All-Purpose Flour2 cups
- Sugar2 cups, chopped
- Ground Cinnamon1 tsp
Instructions
- 1
Work quickly with chilled butter so it stays in visible flakes through the dough.
- 2
Cut the cold butter through the flour, drizzle in ice water, and gather the dough without kneading.
- 3
Chill the wrapped dough thirty minutes to an hour while you prepare the sugar.
- 4
Layer in the sugar with the ground cinnamon so every slice gets a full cross-section.
- 5
Bake hot until the pastry is bronzed and crisp; a cooling spell keeps the filling from running.
Chef's tip
Resting a custard or pudding overnight deepens the flavour and sets a cleaner slice.
