Nutty buckwheat noodles served cold with a punchy soy-dashi dipping sauce — summer Japanese lunch in a basket.

Ingredients
- Spring Onions2, minced
- Soy Sauce4 tbsp
- Mirin3 tbsp
- Kombu Dashi1.5 cups
- Nori Seaweed1 sheet, shredded
- Soba Noodles300 g
Optional extras
- Saltpinch
- Hot Saucewasabi-style dab optional
- Sesame Seeds1 tsp
Instructions

Cook soba in plenty of boiling water until just tender; drain and rinse under cold water until firm.

Make dipping sauce: simmer dashi with soy and mirin; cool.

Pile noodles on a plate or bamboo mat; top with shredded nori.

Serve sauce in a cup with spring onions alongside.

Dip noodles lightly — don't drown them.
