Thick, chewy wheat noodles in a clear soy-dashi broth with spring onions — the simplest Japanese noodle bowl done right.

Ingredients
- Saltto taste
- Spring Onions2, sliced
- Soy Sauce3 tbsp
- Mirin2 tbsp
- Kombu Dashi4 cups
- Udon Noodles400 g fresh or frozen
Optional extras
- Sesame Oilfew drops optional
- Tofu100 g cubed optional
- Wakame Seaweed1 tbsp optional
Instructions

Bring kombu dashi to a simmer; season with soy sauce, mirin and a pinch of salt.

Cook udon noodles until just tender; drain.

Divide noodles into bowls; ladle hot broth over.

Top with spring onions and optional soft tofu or wakame.

Serve immediately while the noodles still spring.

Don't overcook udon — they go from chewy to soggy in a minute.
