Thengai baath — fragrant coconut rice with mustard tempering, curry leaves and green chili. Mild, festive, lunch-box friendly.

Ingredients

  • Saltto taste
  • Green Chili2, slit
  • Rice3 cups cooked
  • Urad Dal1 tsp
  • Mustard Seeds1 tsp
  • Curry Leaves1 sprig
  • Cashews2 tbsp
  • Coconut Oil2 tbsp
  • Grated Coconut1 cup fresh

  • Dried Red Chilies1

Instructions

    Cook rice; cool.

    Temper mustard, urad dal, dried chili and curry leaves in coconut oil or ghee.

  3. 3

    Add green chili and grated coconut; sauté 1–2 minutes until coconut smells toasty, not browned hard.

  4. 4

    Fold through rice with salt and cashews.

  5. 5

    Serve warm with a simple curry or chips.

Fresh grated coconut beats desiccated — keep the flame medium so it stays sweet.
