Sweet Karnataka kesari baath — ghee-roasted rava blooming saffron-yellow with sugar, cashews and raisins. Half of classic chow chow bath.

Ingredients

  • Ghee1/3 cup
  • Sugar1 cup
  • Cashews2 tbsp
  • Golden Raisins2 tbsp
  • Semolina (Rava)1 cup
  • Green Cardamom4, powdered

Optional extras

  • Saltpinch
  • Saffronpinch or turmeric for color
  • Milk1/2 cup optional

Instructions

    Roast semolina in ghee until aromatic and lightly gold.

    Boil water (or thin milk) with saffron/color, sugar and a pinch of salt.

    Pour hot liquid into rava carefully, stirring; cover and cook until soft.

    Fry cashews and raisins in ghee; fold in with cardamom.

    Rest 5 minutes; scoop into mounds.

Chef's tip

1:2.5 rava-to-liquid is a forgiving hotel-style soft kesari; adjust for firmer slices.
