Andhra street-side poppers — a tangy batter blisters into golden orbs with onions crackling inside. Sold by the paper cone with coconut chutney, finished before you find a bench.

Ingredients

  • Yogurt1/2 cup, whisked
  • Salt1 tsp
  • Onion1, finely chopped
  • Green Chili2, minced
  • Cumin Seeds1 tsp
  • Fresh Cilantro2 tbsp, chopped
  • Peanut Oilfor deep frying
  • Rice Flour1 cup

Instructions

    Whisk rice flour, yogurt and water into a thick dropping batter.

    Stir in chopped onion, green chilies, cilantro, cumin and salt; rest 10 minutes.

    Heat oil to medium-high.

    Drop spoonfuls in and let them puff and roll on their own.

    Fry till deep golden with crisp spikes; drain and serve hot.

Chef's tip

The batter should be thicker than pancake batter — thin batter means flat punugulu.
