Kerala's small round temple-offering sweets — jaggery-fermented rice batter studded with coconut chips and banana, fried in appam pans. Dense, fragrant, faintly boozy from the ferment.

Ingredients

  • Ghee1 tbsp
  • Peanut Oilfor the appam pan
  • Rice Flour1.5 cups
  • Plantain1/2, mashed
  • Grated Coconut1/4 cup
  • Jaggery3/4 cup, melted
  • Green Cardamom3, powdered

Instructions

    Melt jaggery with a splash of warm water; strain.

    Mix rice flour, jaggery syrup, mashed plantain, cardamom and water to a thick batter; rest 2 hours.

    Fry coconut pieces in ghee till gold; fold into batter.

  4. 4

    Fill greased appam-pan wells three-quarters full.

  5. 5

    Cook on medium, turning once, till mahogany and springy.

Chef's tip

The 2-hour rest gives unniyappam their characteristic light sourness — don't skip it.
