The ghee-fried elder sibling of unniyappam, rich with cardamom and toasted coconut in a jaggery batter. One of Kerala's oldest sweets, still the smell of every Onam kitchen.

Ingredients

  • Ghee2 tbsp
  • Peanut Oil1 tsp, for the pan
  • Rice Flour1.5 cups
  • Grated Coconut1/4 cup
  • Jaggery3/4 cup, melted
  • Green Cardamom4, powdered

Instructions

    Dissolve and strain the jaggery.

    Combine rice flour, jaggery syrup, ghee, coconut and cardamom into a thick pouring batter.

    Rest 1 hour.

  4. 4

    Pour into hot appam-pan wells greased with ghee.

  5. 5

    Fry on medium-low, turning once, till dark brown and glossy.

Chef's tip

Low and slow is right — high heat burns jaggery batter before the centre sets.
