Semi-ripe jackfruit strips fried in coconut oil until they turn amber and lace-edged — sweet, smoky, and the first thing sold out at Kerala market stalls before noon.

Ingredients
- Salt1 tsp
- Jackfruit2 cups, semi-ripe pods
- Coconut Oil2 cups, for frying
Optional extras
- Turmeric Powder1/4 tsp
Instructions

Remove pods from semi-ripe jackfruit; discard seeds and cut into thick strips.

Fry in coconut oil on medium in small batches.

Stir occasionally as moisture leaves and edges crinkle.

Fry till deep amber and firm.

Salt lightly and cool on a rack — they crisp fully as they cool.
Chef's tip
Choose fruit that gives slightly when pressed — fully raw stays fibrous, fully ripe dissolves.
