Golden-cratered urad dal bombs with a pepper heat that surprises — crisp shell, pillow inside. Mysore's proudest tiffin, best demolished straight from the oil with coconut chutney.

Ingredients

  • Yogurt2 tbsp
  • Salt1 tsp
  • Ginger1 tsp, grated
  • Green Chili2, minced
  • Urad Dal1 cup, soaked and ground
  • Curry Leaves8, chopped
  • All-Purpose Flour2 tbsp
  • Coconut Oilfor deep frying
  • Black Pepper1 tsp, coarsely crushed

Instructions

    Soak urad dal 3 hours; grind to a thick, fluffy batter with minimal water.

    Beat the batter well to aerate — it should float in water.

    Fold in flour, yogurt, green chilies, ginger, curry leaves, crushed pepper and salt.

    Wet your palm and shape into balls.

    Fry in coconut oil on medium till deep gold with crackled tops.

Chef's tip

Beat the batter in one direction for 3 minutes — trapped air is what makes the craters.
