The hardest-working sweet in Tamil Nadu — just rice flour and jaggery, yet it becomes a glossy, blistered, melt-at-first-bite disc that defines Deepavali mornings. Grandmothers judge each other on this one.

Ingredients

  • Ghee1 tbsp
  • Peanut Oilfor deep frying
  • Rice Flour2 cups
  • Jaggery1 cup
  • Green Cardamom4, powdered

Optional extras

  • Sesame Seeds1 tbsp

Instructions

    Boil jaggery with water to a soft-ball syrup.

    Stir rice flour into the hot syrup off the heat; rest overnight covered.

  3. 3

    Knead in cardamom and sesame until glossy.

  4. 4

    Flatten into thick discs on banana leaf or parchment.

  5. 5

    Fry on medium in ghee-oil, pressing gently as it puffs, till deep copper.

Chef's tip

Resting the dough overnight is not tradition for its own sake — it transforms the texture completely.
