The famous spiral from Pune and Baroda — sweet, hot, tangy gram-flour pinwheels stuffed with coconut and poppy. One piece never happens; bhakarwadi is a tin, not a snack.

Ingredients
- Salt1 tsp
- Cumin Seeds1 tsp
- Coriander Powder1 tbsp
- All-Purpose Flour1/2 cup
- Sugar2 tbsp
- Tamarind Paste1 tbsp
- Gram Flour1 cup
- Red Chili Powder1.5 tsp
- Peanut Oil3 tbsp + for frying
- Sesame Seeds1 tbsp
- Grated Coconut2 tbsp, dry-roasted
- Poppy Seeds1 tbsp
Instructions

Knead gram flour, all-purpose flour, oil and salt into a stiff dough; rest 20 minutes.

Dry-roast coconut, sesame and poppy seeds; mix with coriander powder, chili powder, sugar, tamarind and salt for the filling.

Roll the dough into thin sheets; spread filling and roll into tight logs.

Slice into pinwheels and press lightly.

Shallow or deep fry on medium till crisp and dark gold.
Chef's tip
Roll the log tightly and chill 10 minutes before slicing — the spirals stay sharp.
