Kothimbir Vadi

Maharashtra's coriander-square: a steamed block of cilantro-heavy besan, sliced and fried until the edges crackle. Half herb, half snack, entirely gone in minutes.

Ingredients

  • Salt1 tsp
  • Ginger1 tsp, grated
  • Green Chili2, minced
  • Turmeric Powder1/4 tsp
  • Fresh Cilantro1 cup, tightly packed and chopped
  • Gram Flour1 cup
  • Peanut Oilfor shallow frying
  • Sesame Seeds1 tbsp

Instructions

    Chop a large bunch of cilantro fine; mix with gram flour, green chilies, ginger, turmeric, sesame and salt.

    Add water to make a thick batter and steam in a greased tray 20 minutes.

    Cool completely and cut into diamonds.

    Shallow fry on both sides till crisp browned edges form.

    Serve with green chutney while hot.

Chef's tip

Steam the block ahead — chilled kothimbir vadi fries into much sharper, crispier edges.
