Jodhpur's dessert kachori — a blistered fried shell cracked open to reveal khoya, nuts and cardamom, finished with a sugar glaze. Rajasthani sweet shops sell it by the boxful to every visitor.

Ingredients

  • Ghee3 tbsp
  • All-Purpose Flour2 cups
  • Sugar1/2 cup + 1/2 cup for syrup
  • Cashews1/4 cup, chopped
  • Peanut Oilfor deep frying
  • Almonds1/4 cup, chopped
  • Green Cardamom5, powdered
  • Khoa (Mawa)1 cup, crumbled

Instructions

    Knead all-purpose flour with ghee and water into a soft dough; rest 30 minutes.

    Crumble and lightly roast the khoya; mix with chopped nuts and cardamom.

    Roll discs, fill, seal and flatten gently into kachoris.

    Deep fry on low till deep gold and hollow-sounding.

    Fill through a hole in the base, glaze with sugar syrup and dry 30 minutes.

Chef's tip

Fill while the shells are barely warm — hot shells sweat and turn soggy.
