Winter in Gujarat, wrapped in pastry: fresh pigeon peas (lilva) sweetened, spiced and sealed in a crisp fried shell. Surti households guard this recipe like jewellery.

Ingredients

  • Salt1.25 tsp
  • Ginger1 tbsp, grated
  • Green Chili2, minced
  • Cumin Seeds1 tsp
  • Lemon1, juiced
  • Sugar1 tbsp
  • Gram Flour1.5 cups
  • Peanut Oil3 tbsp + for frying
  • Pigeon Peas1 cup, fresh (lilva)

Instructions

    Knead gram flour with oil, salt and water into a stiff pastry dough; rest 20 minutes.

    Cook lilva with green chilies, ginger, sugar and lemon till tender and jammy; cool.

    Roll discs, spoon in the filling, pleat and seal into kachoris.

  4. 4

    Fry on low-medium till the shell is pale gold and flaky.

    Crack open and serve hot with chutney.

Chef's tip

Fry gently the whole way — kachori shells blister white if rushed and split open.
