Kalmi Vada

Rajasthan's twice-fried dal batons from the Marwar thali — crisp armour, spicy soft heart, built to survive a desert journey. The double fry is the whole point.

Ingredients

  • Salt1.25 tsp
  • Onion1, finely chopped
  • Ginger1 tbsp, grated
  • Green Chili2, minced
  • Yellow Lentils (Toor Dal)3/4 cup, soaked
  • Ajwain1/2 tsp
  • Peanut Oilfor deep frying
  • Yellow Moong Dal1/4 cup, soaked

Instructions

    Soak dals 4 hours; grind coarsely with minimal water.

    Mix in onion, green chilies, ginger, ajwain and salt.

    Shape into thick flat batons and steam 15 minutes to set.

    Cool and slice into rounds.

  5. 5

    Deep fry the rounds twice — once pale, once gold — for the legendary crust.

Chef's tip

The pre-steam is what separates kalmi vada from ordinary dal tikki; don't skip straight to frying.
