Kota's street legend — thin blistered maida shells over a fiery moong-dal filling, drowned in red chutney by the shop. Better than Kota coaching: fewer tears, more masala.

Ingredients
- Salt1.25 tsp
- Ginger1 tbsp, grated
- Green Chili3, minced
- Ghee2 tbsp
- Asafoetida1/4 tsp
- All-Purpose Flour2 cups
- Peanut Oilfor deep frying
- Fennel Seeds1 tsp
- Yellow Moong Dal1/2 cup, soaked
Instructions

Knead maida with ghee and salt into a soft dough; rest 30 minutes.

Soak moong dal 2 hours, drain; grind coarsely with green chilies and ginger.

Cook the dal with fennel, asafoetida and salt to a dry filling.

Stuff, roll gently and deep fry on medium-low till puffed and gold.

Serve with the obligatory fiery red chutney.
Chef's tip
Roll filled kachori gently — a torn shell lets oil in and ruins the puff.
