North India's travelling biscuit — flaky, ajwain-scented discs fried till pale gold that last weeks in a tin. Every long car journey in India has passed on mathri.

Ingredients
- Kasuri Methi2 tbsp, crushed
- Salt1.25 tsp
- Ghee4 tbsp, melted
- All-Purpose Flour2 cups
- Ajwain1 tsp
- Peanut Oilfor deep frying
- Semolina (Rava)2 tbsp
Instructions

Rub ghee into flour, semolina, ajwain, kasuri methi and salt until sandy.

Add just enough water for a very stiff dough; rest 20 minutes.

Roll thick small discs and prick all over with a fork.

Fry on low-medium till pale gold and blistered.

Cool completely — they firm up as they sit.
Chef's tip
Prick well or they puff like puris — mathri is meant to stay flat and dense.
