The Bikaner wire — hair-thin fried strands of moong and gram flour that India puts on everything from chaat to curries. Homemade bhujia embarrasses the packet every time.

Ingredients

  • Salt1 tsp
  • Asafoetida1/4 tsp
  • Gram Flour1 cup
  • Red Chili Powder1 tsp
  • Peanut Oilfor deep frying
  • Yellow Moong Dal1/2 cup, roasted and ground

Instructions

    Dry-roast moong dal, cool and grind to a fine flour.

    Mix with gram flour, chili powder, asafoetida and salt.

    Knead with water into a soft, smooth dough.

  4. 4

    Press thin wires directly into medium-hot oil using the fine sev plate.

  5. 5

    Fry briefly till set; break into lengths when cool.

Chef's tip

Press continuously in a swirling motion so the wires cook evenly — hesitation makes clumps.
