
Sev Tameta nu Shaak
Gujarati tomato curry crowned with crunchy sev, sweet, sour and spicy in one bite. A one-pan weeknight sabzi that asks for little and gives a lot. Serve hot with rotis, dal and a wedge of lemon.
Ingredients
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Saltto taste
- Onion1, finely chopped
- Tomato3, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Lemon1
- Red Chili Powder1 tsp
- Potato Sticks2 tbsp
- Jaggery3/4 cup, grated
Optional extras
- Fresh Cilantro2 tbsp, chopped
Instructions

Wash and cut the tomato into even, bite-size pieces so everything cooks at the same pace.

Soften the onions in oil over a medium flame with a little salt until translucent and sweet.

Add ginger garlic paste, cook out the raw smell, then bloom the turmeric, chili and coriander in the oil.

Turn the tomato through the masala with the potato sticks, clamp on a lid and let the steam work — check after 10 minutes.

Uncover, raise the heat for two minutes to dry off any liquid, then shower with cilantro and a squeeze of lemon.
Chef's tip
Don't crowd the pan; steam is the enemy of the browning that builds flavour.
