
Dahi Wale Aloo
Potatoes simmered in a whisked yogurt gravy, the weeknight dish every North Indian home rotates. Simple, spiced straight-talk food — no gravy to hide behind. Pile beside phulka and a bowl of cooled yogurt.
Ingredients
- Yogurt2 cups, whisked
- Ginger Garlic Paste1 tbsp
- Garam Masala1/2 tsp
- Kasuri Methi1 tbsp
- Saltto taste
- Onion1, finely chopped
- Tomato2, chopped
- Green Chili1-2, slit
- Cumin Seeds1 tsp
- Coriander Powder1 tsp
- Turmeric Powder1/2 tsp
- Vegetable Oil2 tbsp
- Potato3 medium, cubed
- Red Chili Powder1 tsp
- Green Cardamom1 tsp
Optional extras
- Fresh Cilantro2 tbsp, chopped

Pat the potato dry and chop it into similar-sized chunks — dry surfaces brown better.

Warm the oil, add cumin and a pinch of asafoetida, then the onions — cook till bronzed at the edges.

Tip in the ginger garlic paste and green chilies, then the spices — fry until the oil separates at the edges.

Turn the potato through the masala with the yogurt, clamp on a lid and let the steam work — check after 10 minutes.

Uncover, raise the heat for two minutes to dry off any liquid, then shower with cilantro and a squeeze of lemon.
Chef's tip
A final squeeze of lemon or lime right before serving wakes up every other flavour.
