Mysore rasam, gentler than Madras, deeper than Hyderabad. Velvet in a bowl — warm, gentle and quietly spiced. Ladle into warm bowls with a crack of pepper.

Ingredients

  • Butter2 tbsp
  • Saltto taste
  • Onion1, chopped
  • Tomato3, chopped
  • Garlic3 cloves
  • Turmeric Powder1/4 tsp
  • Curry Leaves2 sprigs
  • Yellow Lentils (Toor Dal)1 cup, rinsed
  • Vegetable Stock4 cups
  • Tamarind Paste2 tbsp
  • Black Pepper1/2 tsp

Optional extras

  • Fresh Cilantro2 tbsp, chopped

Instructions

    Prep the vegetables and the yellow lentils (toor dal): washed, peeled and cut to even sizes.

    Warm the butter, add onion and garlic, and let them soften slowly.

  3. 3

    Add the yellow lentils (toor dal) and tamarind paste with the spices; stir two minutes to coat in the fat.

    Cover with stock and simmer gently; the spoon should slide through everything.

  5. 5

    Blend till velvety, check the salt, and serve with cream swirls and crusty bread.

Chef's tip

Sweat, don't brown, the onions for a clean golden colour.
