Orange Sponge Cake
Whole-orange sponge — juice in the batter, zest in the crumb. A tender, bakery-style crumb that stays moist for days. Keeps well covered for three days — if it lasts that long.
Ingredients
- Butter3 tbsp
- Salta pinch
- Eggs4
- Sugar1 cup
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Orange2, zested and juiced
- Orange Zest1 tbsp
Instructions
- 1
Set the oven to 180 C / 350 F and line the base of your tin with parchment.
- 2
Whisk the butter, eggs and sugar until pale, thick and doubled — this takes three or four good minutes.
- 3
Fold the flour and orange zest through in two additions; overmixing makes a dense crumb.
- 4
Pour into the tin and bake 30-40 minutes, until a skewer in the centre comes out clean.
- 5
Once cool, slice and serve, or ice it generously and let the frosting set.
Chef's tip
Chill the dough when the recipe says so; warm dough spreads into flat, greasy cookies.
