Blueberry Pound Cake
Blueberries suspended in a buttery crumb, bursting purple at every slice. Deeply flavourful with a soft, even crumb and golden edges. Great as-is, or warmed for twenty seconds with a scoop of ice cream.
Ingredients

- Salta pinch
- Eggs3
- Sugar1 tsp
- Baking Powder2 tsp
- Vanilla Extract1 tsp
- Blueberries2 cups, chopped
- Lemon Zest1 tbsp
Instructions

Preheat the oven to 175 C / 350 F, grease the tin and dust it so nothing sticks later.

Beat the butter with the sugar until light and fluffy, then add the eggs one at a time.

Fold the flour and butter through in two additions; overmixing makes a dense crumb.

Pour into the tin and bake 30-40 minutes, until a skewer in the centre comes out clean.

Level the top, pile on the frosting, and let it rest ten minutes before slicing.

Room-temperature ingredients blend smoother — pull the dairy and eggs out of the fridge an hour ahead.
