
Mango Cream Cake
Mango pulp folded through cream sponge, the summer-birthday cake of tropical kitchens. The kind of simple, generous cake that disappears before it cools. Serve thick slices with tea or a spoonful of whipped cream.
Ingredients
- Butter1/2 cup, softened
- Heavy Cream1/4 cup
- Salta pinch
- Eggs3
- Sugar1 tsp
- Baking Powder2 tsp
- Vanilla Extract1 cup, chopped
- Mango2, pureed
Instructions

Set the oven to 180 C / 350 F and line the base of your tin with parchment.

Beat the butter with the sugar until light and fluffy, then add the eggs one at a time.

Alternate the dry ingredients with the milk, folding with a spatula so the batter stays airy.

Bake until the top springs back when pressed, 28-38 minutes depending on your tin.

Cool completely, then frost or dust — a warm cake melts frosting into a puddle.

With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
