
Oatmeal Raisin Cookies
Chewy oat cookies studded with cinnamon-plumped raisins, unfairly maligned. Soft-centred and generous, the sort that vanishes warm off the tray. Best the day they are baked, but they keep three days in a tin.
Ingredients
- Butter3 tbsp
- Salta pinch
- Eggs1
- Sugar3/4 cup
- Baking Powder1/2 tsp
- Vanilla Extract1 tsp
- Ground Cinnamon1 tsp
- Golden Raisins2 tbsp
- Rolled Oats1 cup
Instructions

Set the oven to 175 C / 350 F and line your trays so nothing sticks.

Sift the dry ingredients — flour, golden raisins, leavener — into a bowl and whisk briefly.

Work the butter and sugar to a paste, add eggs, then bring the dough together with the dry ingredients.

Stir the rolled oats through the dough until evenly studded.

Roll or scoop the dough, bake 11-13 minutes, then cool on the tray five minutes — they finish setting as they cool.
Chef's tip
With butter-based batters, cream until the mixture actually lightens in colour; that trapped air is your rise.
